Bisteck a lo Pobre

Bistech a Lo Pobre is a very popular way to prepare steak in Peru. With the main ingredients being steak, potato, onions and eggs it is common to serve this dish with salad and/or rice.

Ingredients

  • 4 sirloin steaks cut to 1/2 inch thickness
  • 4 cloves garlic, mashed
  • salt, pepper, cumin and smoked paprika to tast
  • 2 large onions, sliced thinly
  • 4 medium Yukon Gold potatoes. The Yukon needs to be  peeled and thinly sliced.
  • 1 packet Sazon seasoning (optional)
  • 4 tbsp olive oil
  • 4 extra large eggs

Instructions

  1. Rub garlic on each individual steak. Season each steak with salt pepper, smoked paprika and cumin.
  2. Heat the olive oil in either a large frying pan or skillet.
  3. Add the thinly sliced onions and the potatoes into the frying pan and sprinkle with salt, pepper and the Sazon. Saute the onions and potatoes over medium to medium-high heat, until they are both very tender. It should take roughly 8-10 minutes. Once the onion and potatoes are tender remove them from the pan and place on a serving platter.
  4. Using the same pan place the steaks and cook them to the temperature you desire. If it is needed, add a little more oil to the pan when cooking the steak. When the steak is finished cooking set it along side the potatoes and onions.
  5. Fry the eggs, sunny side up, in a pan. You will want to leave the yolks soft and runny.
  6. Distribute the onions and potatoes among the four plates laying a steak on top of each plate. On top of each steak place one of your cooked sunny side eggs.
